Fruit and Berry Quinoa Salad

Ingredients

  • 1 (9 oz.) jar of your favorite berry fruit spread

  • 1/4 cup water

  • 2 tablespoons balsamic vinegar

  • 1 1/2 teaspoons dijon mustard

  • 1/4 cup canola oil

  • 5 cups mixed fresh berries

  • 3 cups cooked TruRoots® Organic Sprouted Quinoa Blend cooled

  • 1/4 cup crumbled garlic and herb feta cheese

Instructions

  • WHISK fruit spread, water, vinegar, mustard and oil in medium bowl until thoroughly blended. Season to taste with salt and pepper.

  • BLEND berries and 1/2 cup dressing in medium bowl until combined. Place quinoa on serving platter. Top with fruit. Sprinkle with cheese. Serve with remaining dressing.
