Sprouted Green Lentil Provencal Salad

Ingredients

  • 1 cup TruRoots® Organic Sprouted Green Lentils

  • 1/2 cup finely diced red bell pepper

  • 1/2 red onion finely diced

  • 2 tablespoons Extra Virgin Olive Oil

  • 2 tablespoons white wine vinegar

  • 1/2 teaspoon Salt

  • 1/4 teaspoon ground black pepper

  • 1/4 cup chopped fresh flat-leaf parsley

  • 1/2 teaspoon chopped fresh rosemary

Instructions

  • COOK sprouted lentils according to package directions. Drain well.

  • COMBINE warm lentils, bell pepper, red onion, oil, vinegar, salt and pepper in medium bowl. Toss well. Cool to room temperature. Stir in parsley and rosemary just before serving.
