Sprouted Green Lentil Provencal Salad

Ingredients
1 cup TruRoots® Organic Sprouted Green Lentils
1/2 cup finely diced red bell pepper
1/2 red onion finely diced
2 tablespoons Extra Virgin Olive Oil
2 tablespoons white wine vinegar
1/2 teaspoon Salt
1/4 teaspoon ground black pepper
1/4 cup chopped fresh flat-leaf parsley
1/2 teaspoon chopped fresh rosemary
Instructions
COOK sprouted lentils according to package directions. Drain well.
COMBINE warm lentils, bell pepper, red onion, oil, vinegar, salt and pepper in medium bowl. Toss well. Cool to room temperature. Stir in parsley and rosemary just before serving.
