Black Bean Quinoa Salad

Ingredients

  • 1 cup uncooked TruRoots® Organic Quinoa

  • 2 cups Water

  • 1/3 cup Extra Virgin Olive Oil

  • 1/4 cup Santa Cruz Organic® Pure Lime Juice

  • 1 teaspoon ground cumin

  • 1/2 teaspoon Salt

  • 1 (14.5 oz.) can black beans rinsed and drained

  • 1/2 cup red ripe Roma tomatoes, seeded and chopped

  • 1/2 cup diced red onion

  • 1/4 cup diced red pepper

  • 1/4 cup jalapeños, seeded and chopped

  • 2 tablespoons chopped fresh cilantro

Instructions

  • COOK quinoa according to package directions. Cool to room temperature. Fluff with fork.

  • WHISK together oil, lime juice, cumin and salt in large bowl.

  • ADD quinoa, black beans, tomatoes, onions, red pepper, jalapenos and cilantro to bowl. Stir to combine. Chill 30 minutes.
